<p>Supplementary data for a qualitative study to show the changes in the pasting properties of maize, teff, and potato starch when treated with cellulose nanofiber and microcrystalline cellulose.</p> <p>Treatments underwent both short (30 minutes) and extended pasting cycles (120 minutes).</p> <p><br></p>
