The datasets underpin a dissertation titled "Comparing the effects of two mono-component protease products at two different dietary essential amino acid matrices on broiler performance and digestibility". The study aimed to validate the importance of applying accurate matrix values when using exogenous mono-component proteases in broiler feed. The treatments were fed in a three-phase feeding program (starter, grower, and finisher). All treatments received 1000 FTU/kg of a novel consensus bacterial 6–phytase variant expressed in Trichoderma reesei, with a Ca and P matrix of 0.18% applied.
