Dataset for quantification of anthocyanins, flavonoids and phenolic acids in pigmented flower extracts from the Geraniaceae and Lamiaceae plant families. The data also include thermal and oxidative degradation kinetics as well as cellular and chemical assays for determination of health-promoting properties of pigmented flower extracts from the Geraniaceae and Lamiaceae plant families.
